These crispy and naturally sweet sweet potato chips are a healthy and delicious snack. Baked to perfection with a touch of sea salt and optional spices, they're a great gluten-free alternative to traditional potato chips.

Ingredients
- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Onion Powder
- 1/4 teaspoon Smoked Paprika
- 1/4 teaspoon Black Pepper
- pinch Cayenne Pepper
- 1 teaspoon Rosemary
- as needed Coconut oil spray

Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper and spray with coconut oil.

Wash and scrub the sweet potatoes thoroughly. There is no need to peel them.

Using a mandoline or a very sharp knife, slice the sweet potatoes into very thin, even slices (about 1/8 inch thick).

In a large bowl, toss the sweet potato slices with olive oil, sea salt, garlic powder, onion powder, smoked paprika, black pepper, cayenne pepper, and rosemary (if using). Make sure the chips are evenly coated.

Arrange the sweet potato slices in a single layer on the prepared baking sheets, making sure they don't overlap.

Bake for 15 minutes, then flip the chips and bake for another 10-15 minutes, or until the edges are golden brown and crispy. Keep a close eye on them, as they can burn easily.

Remove from the oven and let the chips cool completely on the baking sheets. They will crisp up further as they cool.

Store in an airtight container at room temperature for up to 3 days.

- •For extra crispy chips, soak the sweet potato slices in ice water for 30 minutes before baking. Drain well and pat dry before tossing with oil and spices.
- •Don't overcrowd the baking sheets; bake in batches if necessary to ensure even cooking.
- •Adjust the spices to your liking. For a sweeter chip, add a pinch of cinnamon or nutmeg.
