- 1 English Cucumber
- 4 oz Smoked Salmon
- 1 cup Raw Cashews
- 2 tablespoons Lemon Juice
- 2 tablespoons Fresh Dill
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon Onion Powder
- 1 tablespoon Nutritional Yeast
- 1/4 cup Water
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Black Pepper
- 1 tablespoon Fresh Chives
- 1 teaspoon Everything Bagel Seasoning

Soak the raw cashews in hot water for at least 30 minutes, or ideally 1-2 hours, to soften them.

While the cashews are soaking, wash and slice the cucumber into approximately 1/4 inch thick rounds.

Drain and rinse the soaked cashews thoroughly.

In a high-speed blender or food processor, combine the cashews, lemon juice, fresh dill, garlic powder, onion powder, nutritional yeast, water, salt, and pepper.

Blend until completely smooth and creamy, adding more water 1 tablespoon at a time if needed to achieve the desired consistency. The consistency should be thick enough to hold its shape on the cucumber.

Evenly spread a dollop of the cashew cream cheese on each cucumber slice.

Top each cucumber round with a small piece of smoked salmon.
