Ingredients
- 4 cups Mixed Nuts (almonds, pecans, walnuts, cashews)
- 1/4 cup Maple Syrup
- 2 tablespoons Coconut Sugar
- 1 tablespoon Olive Oil
- 1 teaspoon Sea Salt
- 1 teaspoon Cinnamon
- 1/2 teaspoon Ground Ginger
- 1/4 teaspoon Nutmeg
- 1/8 teaspoon Cayenne Pepper
- 1 teaspoon Rosemary (fresh, finely chopped)
- 1 Egg White (optional, for extra glaze)
- 1 teaspoon Water (if using egg white)
Instructions
- 1
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- 2
In a large bowl, combine the mixed nuts, maple syrup, coconut sugar, olive oil, sea salt, cinnamon, ginger, nutmeg, cayenne pepper, and rosemary.
- 3
If using the egg white, whisk it with the water in a separate small bowl until slightly frothy. Gently fold the egg white mixture into the nut mixture to coat evenly.
- 4
Spread the nut mixture in a single layer on the prepared baking sheet.
- 5
Bake for 25-30 minutes, stirring every 10 minutes to ensure even toasting and prevent burning.

Remove from oven and let cool completely on the baking sheet. The nuts will crisp up as they cool.
- 7
Break apart any large clumps and store in an airtight container at room temperature.
