- 12 whole Jalapeños
- 8 oz Cream cheese (softened)
- 1/2 cup Cheddar cheese (shredded)
- 1/4 cup Monterey Jack cheese (shredded)
- 1/2 tsp Garlic powder
- 1/4 tsp Onion powder
- 1/4 tsp Smoked paprika
- 1/4 tsp Salt
- 1/8 tsp Black pepper
- 2 large Eggs (beaten)
- 1/2 cup Gluten-free all-purpose flour
- 1 cup Gluten-free panko breadcrumbs

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Carefully cut each jalapeño in half lengthwise and remove the seeds and membranes. (Wear gloves for this step!)

In a medium bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until smooth and creamy.

Fill each jalapeño half with the cheese mixture.

Place the gluten-free flour, beaten eggs, and gluten-free panko breadcrumbs in separate shallow dishes.

Dredge each filled jalapeño in the flour, then dip in the egg, and finally coat with the panko breadcrumbs, pressing gently to adhere.
