- 1/4 cup Tahini
- 3 tablespoons Lemon Juice
- 2 cloves Garlic
- 2 tablespoons Olive Oil (plus extra for drizzling)
- 2-4 tablespoons Cold Water
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/4 teaspoon Paprika
- 2 tablespoons Fresh Dill (chopped)
- 2 tablespoons Fresh Parsley (chopped)
- 2 tablespoons Pine Nuts (optional, for garnish)
Instructions
- 1
Prepare the Hummus: Drain and rinse the chickpeas thoroughly. Place them in a food processor along with tahini, lemon juice, garlic, olive oil, salt, cumin, and paprika.
- 2
Blend until smooth: Process the mixture until it becomes very smooth, scraping down the sides as needed. Add cold water, one tablespoon at a time, until you reach your desired consistency.
- 3
Taste and Adjust: Taste the hummus and adjust seasonings as needed. Add more lemon juice for tanginess or salt for flavor.
- 4
Prepare the Cucumber: Wash and slice the cucumber into 1/4-inch thick rounds.
- 5
Assemble the Bites: Spread a generous spoonful of hummus on each cucumber slice.
- 6
Garnish and Serve: Sprinkle the hummus-topped cucumber slices with chopped fresh dill and parsley. If desired, garnish with pine nuts and a drizzle of olive oil.
- 7
Chill (optional): For best flavor, chill for at least 30 minutes before serving.
