Ingredients
- 16 count Medjool Dates
- 4 oz Goat Cheese
- 1/4 cup Pecans (chopped)
- 8 slices Bacon (thin-cut, halved)
- 1 tablespoon Fresh Rosemary (minced)
- 1 tablespoon Balsamic Glaze (optional)
- 1/4 teaspoon Black Pepper (freshly ground)
- 1 teaspoon Olive Oil
- 1/4 teaspoon Sea Salt

Preheat oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.

Slice each date lengthwise, being careful not to cut all the way through. Remove the pit.

In a small bowl, combine goat cheese, chopped pecans, rosemary, salt and pepper. Mix well.

Spoon or pipe a small amount of the goat cheese mixture into each date.

Wrap each stuffed date with a half slice of bacon, securing with a toothpick if needed.

Place the bacon-wrapped dates on the prepared baking sheet, seam-side down.
