Ingredients
- 4 medium Zucchini
- 3 tablespoons Olive oil
- 4 cloves Garlic (minced)
- 1/4 cup Fresh basil (chopped)
- 1/4 cup Fresh parsley (chopped)
- 1 tablespoon Lemon juice
- 1/4 teaspoon Red pepper flakes (optional)
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 cup Cherry tomatoes (halved)
- 1/4 cup Pine nuts (toasted)
- 1/4 cup Parmesan cheese (grated, optional)
- 1 teaspoon Fresh oregano (chopped)

Wash and trim the ends off the zucchini.

Using a spiralizer, turn the zucchini into noodles. If you don't have a spiralizer, you can use a vegetable peeler to create wide ribbons.

Heat olive oil in a large skillet over medium heat.

Add minced garlic and red pepper flakes (if using) to the skillet and cook for about 30 seconds, until fragrant, being careful not to burn the garlic.

Add the zucchini noodles to the skillet and cook for 3-5 minutes, until slightly softened but still firm. Do not overcook, as they will become watery.

Stir in the cherry tomatoes, basil, parsley, oregano, lemon juice, salt, and pepper.

Toss everything together to coat the zucchini noodles evenly.

Remove from heat and transfer to a serving dish.

Garnish with toasted pine nuts and parmesan cheese (if using). Serve immediately.
Tips & Notes
- •Don't overcook the zucchini noodles, as they will release too much water and become mushy.
- •To remove excess moisture from the zucchini noodles, sprinkle them with salt and let them sit in a colander for 15 minutes before cooking. Pat them dry with paper towels.
