Ingredients
- 2 cups Heavy Cream
- 1 cup Whole Milk
- 1/2 cup Granulated Sugar
- 1 Vanilla Bean
- 2 1/4 teaspoons Gelatin Powder
- 2 tablespoons Cold Water
- 1/8 teaspoon Pinch of Salt
- 1/2 teaspoon Vanilla Extract
- 1 cup Optional: Fresh Berries
- 2 tablespoons Optional: Honey
- 4 Optional: Mint Leaves
- 1/2 teaspoon Lemon Zest

In a small bowl, sprinkle gelatin powder over cold water. Let it stand for 5-10 minutes to bloom.

In a saucepan, combine heavy cream, whole milk, sugar, salt, and lemon zest. Split the vanilla bean lengthwise and scrape the seeds into the saucepan. Add the vanilla bean pod as well.

Heat the mixture over medium heat, stirring occasionally, until it just comes to a simmer. Do not boil. Remove from heat.

Remove the vanilla bean pod from the saucepan. Stir in the bloomed gelatin and vanilla extract until completely dissolved. Ensure no lumps remain.

Pour the panna cotta mixture into ramekins or dessert glasses. Let it cool slightly at room temperature before covering with plastic wrap.

Refrigerate for at least 4 hours, or preferably overnight, until set.

To serve, gently loosen the edges of the panna cotta with a knife. You can dip the bottom of the ramekin briefly in warm water to help release it. Invert onto a serving plate (optional).
