Ingredients

  • 1 1/2 cups Gluten-Free All-Purpose Flour Blend
  • 2 teaspoons Baking Powder
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Milk (dairy or non-dairy)
  • 1 teaspoon Vanilla Extract
  • 2 Apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 3 cups Vegetable Oil
  • 1/2 cup Powdered Sugar
  • 1-2 tablespoons Milk or Lemon Juice (for glaze)
  • 1/4 cup Optional: Chopped Walnuts or Pecans

Instructions

  1. 1

In a large bowl, whisk together the gluten-free flour, baking powder, sugar, cinnamon, nutmeg, and salt.

  2. 2

In a separate bowl, whisk together the eggs, milk, and vanilla extract.

  3. 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  4. 4

Gently fold in the diced apples and nuts (if using).

  5. 5

Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).

  6. 6

Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.

  7. 7

Remove the fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.

  8. 8

While the fritters are still warm, prepare the glaze by whisking together the powdered sugar and milk or lemon juice until smooth. Drizzle the glaze over the fritters.

  9. 9

    Serve immediately and enjoy!

Tips & Notes

  • For best results, use a gluten-free flour blend that contains xanthan gum or add 1/2 teaspoon xanthan gum to the dry ingredients.
  • Don't overcrowd the pot when frying the fritters; this will lower the oil temperature and result in greasy fritters.
  • Adjust the amount of milk or lemon juice in the glaze to achieve your desired consistency.

Recipe Variations

  • Try adding different herbs for variety.
  • Substitute ingredients based on dietary needs.
