Ingredients
- 2 cups Almond Flour
- 1/2 cup Cocoa Powder (unsweetened)
- 3/4 cup Granulated Sugar
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/2 tsp Almond Extract
- 2 tbsp Melted Coconut Oil (or butter, cooled)
- 1/2 cup Chocolate Chips (optional)
- 1/4 cup Chopped Almonds (optional)
- 1 tsp Espresso Powder (optional)

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the almond flour, cocoa powder, sugar, baking powder, salt, and espresso powder (if using).

In a separate bowl, whisk together the eggs, vanilla extract, almond extract, and melted coconut oil.

Pour the wet ingredients into the dry ingredients and mix until a dough forms. It will be slightly sticky.

Gently fold in the chocolate chips and chopped almonds (if using).

Divide the dough in half. On the prepared baking sheet, shape each half into a log about 8 inches long and 2 inches wide.
