Ingredients

  • 2 cups Almond Flour
  • 1/2 cup Cocoa Powder (unsweetened)
  • 3/4 cup Granulated Sugar
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 2 tbsp Melted Coconut Oil (or butter, cooled)
  • 1/2 cup Chocolate Chips (optional)
  • 1/4 cup Chopped Almonds (optional)
  • 1 tsp Espresso Powder (optional)

Instructions

  1. 1

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the almond flour, cocoa powder, sugar, baking powder, salt, and espresso powder (if using).

  3. 3

In a separate bowl, whisk together the eggs, vanilla extract, almond extract, and melted coconut oil.

  4. 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms. It will be slightly sticky.

  5. 5

Gently fold in the chocolate chips and chopped almonds (if using).

  6. 6

Divide the dough in half. On the prepared baking sheet, shape each half into a log about 8 inches long and 2 inches wide.

  7. 7

Bake for 25-30 minutes, or until the logs are firm to the touch.

  8. 8

Remove from oven and let cool on the baking sheet for 15 minutes.

  9. 9

Using a serrated knife, slice each log into 1/2-inch thick biscotti. Place the biscotti cut-side up on the baking sheet.

  10. 10

Return to the oven and bake for another 8-10 minutes on each side, or until the biscotti are crisp and golden brown.

  11. 11

Let cool completely on a wire rack before storing in an airtight container.

Tips & Notes

  • For extra chocolate flavor, drizzle melted dark chocolate over the cooled biscotti.
  • The biscotti will harden as they cool, so don't worry if they seem a little soft when you take them out of the oven.
  • Store in an airtight container at room temperature for up to a week.
