- 2 lbs Russet Potatoes
- 1/4 cup Avocado Oil
- 2 tbsp Gluten-Free All-Purpose Flour Blend
- 1 tbsp Cornstarch
- 1/2 cup Grated Parmesan Cheese
- 2 tbsp Truffle Oil
- 1 tsp Truffle Salt
- 1/2 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/4 tsp Black Pepper
- 2 tbsp Fresh Parsley (chopped, for garnish)

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Wash and peel the potatoes. Cut them into fries, about 1/2 inch thick.

Place the fries in a large bowl and cover with cold water. Soak for 30 minutes to remove excess starch. Drain well and pat completely dry with paper towels.

In a separate bowl, whisk together gluten-free flour, cornstarch, garlic powder, onion powder, truffle salt, and black pepper.

Add the avocado oil to the dried potatoes and toss to coat evenly. Then, sprinkle the flour mixture over the potatoes and toss until lightly coated.
