- 1 teaspoon Baking Soda
- 2 teaspoons Cream of Tartar
- 1/4 teaspoon Salt
- 1 cup Unsalted Butter, softened
- 1 1/2 cups Granulated Sugar
- 2 Large Eggs
- 2 teaspoons Vanilla Extract
- 2 tablespoons Cinnamon
- 1/4 cup Granulated Sugar (for coating)

Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together gluten-free flour, baking soda, cream of tartar, and salt.

In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

In a small bowl, combine the 2 tablespoons of cinnamon and 1/4 cup of granulated sugar for the coating.

Roll the dough into 1-inch balls. Roll each ball in the cinnamon-sugar mixture, coating evenly.
