- 1.5 lbs Baby Bok Choy
- 2 tbsp Sesame Oil
- 3 cloves Garlic
- 1 tbsp Ginger
- 3 tbsp Gluten-Free Soy Sauce (Tamari)
- 1 tbsp Rice Vinegar
- 1 tbsp Honey or Maple Syrup
- 2 tbsp Sesame Seeds
- 1/4 tsp Red Pepper Flakes
- 1 tsp Cornstarch
- 2 tbsp Water
- 2 stalks Green Onions

Wash the bok choy thoroughly. Separate the leaves from the stalks. Chop the stalks into 1-inch pieces and roughly chop the leaves.

In a small bowl, whisk together the gluten-free soy sauce (tamari), rice vinegar, honey or maple syrup. In a separate small bowl, mix cornstarch with water until dissolved.

Heat sesame oil in a large wok or skillet over medium-high heat. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant, being careful not to burn.

Add the chopped bok choy stalks to the wok and stir-fry for 2-3 minutes until slightly softened.

Add the bok choy leaves and continue to stir-fry for another 2-3 minutes until the leaves are wilted but still bright green.

Pour in the soy sauce mixture and the cornstarch slurry. Stir constantly until the sauce thickens and coats the bok choy, about 1 minute.

Remove from heat and stir in sesame seeds and red pepper flakes (if using).
