- 1/2 cup Tapioca Starch
- 1/4 cup Brown Rice Flour
- 1/4 cup Potato Starch
- 2 teaspoons Xanthan Gum
- 2 1/4 teaspoons Active Dry Yeast
- 1 tablespoon Granulated Sugar
- 1 1/2 teaspoons Salt
- 1 1/2 cups Warm Water (105-115°F)
- 2 tablespoons Olive Oil
- 1 tablespoon Apple Cider Vinegar
- 1 Egg
- 1 Egg White

In a large bowl, whisk together the gluten-free flour blend, tapioca starch, brown rice flour, potato starch, xanthan gum, sugar, and salt.

In a separate bowl, dissolve the yeast in warm water. Let stand for 5-10 minutes until foamy.

Add the olive oil, apple cider vinegar, egg, and egg white to the yeast mixture and whisk to combine.

Pour the wet ingredients into the dry ingredients and mix on medium speed with an electric mixer until a smooth batter forms. It will be sticky.
