  • 2 cups Gluten-Free All-Purpose Flour Blend
  • 2 teaspoons Baking Powder
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 6 tablespoons Cold Unsalted Butter (cut into small cubes)
  • 1/2 cup Heavy Cream (plus extra for brushing)
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh Blueberries
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Turbinado Sugar (for sprinkling (optional))

Instructions

    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, whisk together the gluten-free flour, baking powder, sugar, and salt.

    Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

    In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.

    Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
