In a large bowl, combine the gluten-free flour blend, almond flour, and sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

Add the softened cream cheese and vanilla extract to the flour mixture. Mix until a dough forms. Divide the dough in half, flatten into disks, wrap each in plastic wrap, and refrigerate for at least 2 hours.

In a small bowl, combine the apricot preserves, chopped walnuts, and cinnamon.
