Ingredients
- 2 1/2 cups Gluten-Free All-Purpose Flour Blend
- 2 1/4 teaspoons Active Dry Yeast
- 1 1/4 cups Warm Water
- 1 tablespoon Brown Sugar
- 1 1/2 teaspoons Salt
- 1/2 cup Baking Soda
- 8 cups Water (for boiling)
- 2 tablespoons Apple Cider Vinegar
- 1 Egg
- 2 tablespoons Coarse Sea Salt
- 2 tablespoons Olive Oil
- 2 tablespoons Unsalted Butter
- 1 teaspoon Xanthan Gum

In a large bowl, dissolve the yeast and brown sugar in warm water. Let stand for 5-10 minutes until foamy.

Add the gluten-free flour blend, xanthan gum, olive oil and salt to the yeast mixture and mix until a dough forms. The dough will be slightly sticky.

Cover the bowl and let the dough rise in a warm place for 45-60 minutes, or until doubled in size.

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large pot, bring 8 cups of water and baking soda to a boil. Add apple cider vinegar.

Punch down the dough and divide it into small pieces. Roll each piece into a rope about 1/2 inch thick and cut into 1-inch bite-sized pieces.

Carefully drop the pretzel bites into the boiling water, a few at a time. Boil for 30-60 seconds per batch.

Remove the pretzel bites from the water with a slotted spoon and place them on the prepared baking sheet.

Whisk the egg and brush it over the pretzel bites. Sprinkle with coarse sea salt.

Bake for 12-15 minutes, or until golden brown. Melt butter and brush on top after baking for a nice sheen.
