Ingredients
- 1 1/2 cups Almond flour
- 1/4 cup Tapioca starch
- 1/4 cup Brown sugar
- 1/4 teaspoon Salt
- 6 tablespoons Butter, cold and cubed
- 1 Egg yolk
- 1/2 teaspoon Vanilla extract
- 1 1/2 cups Pecans, chopped
- 1/2 cup Butter, melted
- 3/4 cup Brown sugar, packed
- 1/2 cup Corn syrup
- 2 Eggs
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Salt
Instructions
- 1
Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang.
- 2
In a medium bowl, whisk together almond flour, tapioca starch, brown sugar, and salt.
- 3
Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- 4
Stir in egg yolk and vanilla extract until a dough forms. Press dough evenly into the bottom of the prepared pan.
- 5
Bake the crust for 15 minutes, or until lightly golden.
- 6
While the crust is baking, prepare the filling: In a medium bowl, combine melted butter, brown sugar, corn syrup, eggs, vanilla extract, and salt. Whisk until smooth.
- 7
Stir in the chopped pecans.
- 8
Pour the pecan filling over the pre-baked crust.
- 9
Bake for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
- 10
Let cool completely in the pan before lifting out using the parchment paper overhang and cutting into bars.
Tips & Notes
- •For a richer flavor, toast the pecans before chopping and adding to the filling.
- •If the crust starts to brown too quickly, cover it loosely with foil during the last 10-15 minutes of baking.
- •Cooling completely is crucial for clean cuts, so be patient!
