- 2 cups Dry Roasted Peanuts
- 1 cup Granulated Sugar
- 1/2 cup Light Corn Syrup
- 1/4 cup Water
- 1/4 teaspoon Salt
- 2 tablespoons Unsalted Butter
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla Extract
- 1/8 teaspoon Optional: Pinch of Cayenne Pepper

Prepare a baking sheet by lining it with parchment paper or a silicone mat. Lightly grease the parchment/mat with cooking spray or butter to prevent sticking.

In a medium saucepan, combine the sugar, corn syrup, water, and salt. Stir until the sugar is moistened.

Place the saucepan over medium heat and cook, stirring occasionally, until the sugar dissolves and the mixture begins to boil. Clip a candy thermometer to the side of the pan, ensuring it doesn't touch the bottom.

Continue cooking without stirring, until the candy thermometer reaches 300°F (149°C), the 'hard crack' stage. This will take approximately 15-20 minutes.

Remove the saucepan from the heat and quickly stir in the butter and vanilla extract. The mixture will bubble up.

Add the peanuts and cayenne pepper (if using) and stir until evenly coated.

Immediately stir in the baking soda. The mixture will foam up significantly.

Quickly pour the peanut mixture onto the prepared baking sheet and spread it into a thin, even layer using a heat-resistant spatula. Work quickly, as the brittle will start to harden.
