- 2 large Eggs
- 1/2 cup Brown Sugar (packed)
- 1/2 cup Unsweetened Applesauce
- 1/2 cup Milk (dairy or non-dairy)
- 1/4 cup Melted Coconut Oil
- 1 teaspoon Vanilla Extract
- 1/2 cup Chopped Walnuts or Pecans (optional)
- 1/4 cup Raisins (optional)

Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease well.

In a large bowl, whisk together the oat bran, gluten-free flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, whisk together the eggs, brown sugar, applesauce, milk, melted coconut oil, and vanilla extract.
