Ingredients
- 1 1/2 cups Gluten-Free Graham Cracker Crumbs
- 6 tablespoons Melted Unsalted Butter
- 1/4 cup Granulated Sugar
- 32 ounces Cream Cheese (softened)
- 1 cup Powdered Sugar
- 1 1/2 cups Heavy Whipping Cream
- 2 teaspoons Vanilla Extract
- 1 tablespoon Lemon Juice
- 1/4 teaspoon Salt
- 1 cup Fresh Berries (for topping)
- 1/2 cup Berry Jam (for topping (optional))
- 1 tablespoon Gelatin powder
- 2 tablespoons Cold water

In a medium bowl, combine gluten-free graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the bottom of a 9-inch springform pan.

In a small bowl, sprinkle gelatin over cold water and let stand for 5 minutes to bloom.

In a large bowl, beat softened cream cheese with an electric mixer until smooth and creamy.

Gradually add powdered sugar and beat until well combined.

Heat gelatin mixture in the microwave for 10-15 seconds until dissolved. Let it cool slightly.

Slowly pour in the heavy whipping cream and vanilla extract, mixing until just combined. Don't overmix.

Add the lemon juice and cooled gelatin mixture, mix until well combined.

Pour the cheesecake filling over the prepared crust.

Cover with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to set.

Tips & Notes
- •For a smoother cheesecake, make sure your cream cheese is completely softened before mixing.
- •If you don't have a springform pan, you can use a pie dish, but it will be more difficult to remove the cheesecake.
