- 1 cup Gluten-Free All-Purpose Flour Blend
- 1/2 cup Unsweetened Cocoa Powder
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar (packed)
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 2 Eggs
- 1/2 cup Vegetable Oil
- 1 teaspoon Vanilla Extract
- 1 cup Boiling Water
- 1 cup Semi-Sweet Chocolate Chips
- 1 teaspoon **Peppermint Extract**
- 2-3 drops Green Food Coloring (optional)
- 1/2 cup Mint Chocolate Candies (chopped, for topping)

Preheat oven to 350°F (175°C) and grease and flour (using gluten-free flour) an 8x8 inch baking pan.

In a large bowl, whisk together the gluten-free flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt.

In a separate bowl, whisk together the eggs, vegetable oil, vanilla extract, and peppermint extract.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

Stir in the boiling water until the batter is smooth and thin. Fold in the chocolate chips and green food coloring (if using).
