Ingredients
- 2 tablespoons Olive oil
- 1 medium, chopped Onion
- 3 cloves, minced Garlic
- 1 medium, chopped Red bell pepper
- 2 stalks, chopped Celery
- 28 ounces Canned crushed tomatoes
- 1/2 cup Dry white wine (optional)
- 4 cups Fish stock (gluten-free)
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1 Bay leaf
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1.5 pounds, cut into 2-inch pieces Cod fillets (or other firm white fish)
- 1/4 cup, chopped, for garnish Fresh parsley

Heat olive oil in a large pot or Dutch oven over medium heat.

Add onion, garlic, red bell pepper, and celery and cook until softened, about 5-7 minutes.

Stir in crushed tomatoes and white wine (if using), and cook for 2 minutes, allowing the alcohol to evaporate.

Pour in fish stock, and add oregano, basil, bay leaf, salt, and pepper. Bring to a simmer.

Reduce heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.

Gently add the cod fillets to the stew. Cover and cook for another 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
