Ingredients

  • 1 large head Cauliflower florets
  • 4 oz Cream cheese
  • 1 cup Sharp cheddar cheese (shredded)
  • 6 strips Bacon (cooked and crumbled)
  • 1/2 cup Sour cream
  • 2 tablespoons Butter
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder
  • 1/2 teaspoon Salt (or to taste)
  • 1/4 teaspoon Black pepper (or to taste)
  • 2 tablespoons Fresh chives (chopped)
  • 2-4 tablespoons Milk or broth (optional) (for desired consistency)
  • 2 tablespoons Green onions (chopped, for garnish)

Instructions

  1. 1

Steam the cauliflower florets until very tender, about 15-20 minutes.

  2. 2

Drain the cauliflower well and transfer to a food processor or large bowl.

  3. 3

Add cream cheese, butter, garlic powder, onion powder, salt, and pepper to the cauliflower.

  4. 4

Process or mash until smooth. If using a bowl, use a potato masher or electric mixer.

  5. 5

Stir in the shredded cheddar cheese, crumbled bacon, and sour cream.

  6. 6

If the mash is too thick, add milk or broth, one tablespoon at a time, until desired consistency is reached.

  7. 7

Taste and adjust seasonings as needed.

  8. 8

Garnish with fresh chives and green onions before serving.

Tips & Notes

  • For a smoother mash, use a food processor. For a more rustic texture, use a potato masher.
  • You can use riced cauliflower instead of florets for quicker steaming.
  • Add a pinch of red pepper flakes for a little heat.

Recipe Variations

  • Try adding different herbs for variety.
  • Substitute ingredients based on dietary needs.
