Ingredients
- 1 pound Gluten-free pasta (spaghetti or linguine)
- 1 pound Large shrimp, peeled and deveined
- 1/4 cup Olive oil
- 6 cloves Garlic, minced
- 1/4 cup Lemon juice
- 2 teaspoons Lemon zest
- 1/4 cup Dry white wine (optional)
- 1/4 teaspoon Red pepper flakes
- 1/4 cup Fresh parsley, chopped
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons Butter (optional, for extra richness)
- Grated Parmesan cheese (optional, for serving)

Cook gluten-free pasta according to package directions. Reserve about 1 cup of pasta water before draining.

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Add garlic and red pepper flakes to the skillet and cook for about 30 seconds, until fragrant, being careful not to burn the garlic.

Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.

If using, deglaze the pan with white wine and let it simmer for 1 minute.

Stir in lemon juice, lemon zest, salt, and pepper.

Add the cooked pasta to the skillet with the shrimp and sauce. Toss to coat.

If the sauce is too thick, add some of the reserved pasta water to reach desired consistency.
