Ingredients

  • 2 lbs Potatoes (Yukon Gold or Red)
  • 1/4 cup Olive Oil
  • 2 tablespoons Fresh Rosemary (chopped)
  • 2 tablespoons Fresh Thyme (chopped)
  • 4 cloves Garlic (minced)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 2 tablespoons Fresh Parsley (chopped, for garnish)

Instructions

  1. 1

    Preheat oven to 400°F (200°C).

  2. 2

Wash and scrub the potatoes. Cut them into 1-inch cubes.

  3. 3

In a large bowl, combine the potatoes, olive oil, rosemary, thyme, garlic, salt, pepper, paprika, dried oregano, onion powder, and red pepper flakes (if using).

  4. 4

Toss well to ensure the potatoes are evenly coated with the oil and herbs.

  5. 5

Spread the potatoes in a single layer on a baking sheet.

  6. 6

Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping halfway through.

  7. 7

Remove from oven and sprinkle with fresh parsley before serving.

Tips & Notes

  • For extra crispy potatoes, soak them in cold water for 30 minutes before roasting.
  • Don't overcrowd the baking sheet; use two baking sheets if necessary to ensure the potatoes roast evenly.
  • Adjust the herbs to your preference. Other great additions include sage or chives.

Recipe Variations

  • Try adding different herbs for variety.
  • Substitute ingredients based on dietary needs.
