- 1.5 lbs Boneless, skinless chicken breasts
- 1/4 cup Lemon juice
- 1/4 cup Olive oil
- 2 tsp Dried oregano
- 1 tsp Dried rosemary
- 3 cloves Garlic (minced)
- 1/2 Red onion (cut into 1-inch pieces)
- 1 Red bell pepper (cut into 1-inch pieces)
- 1 Yellow bell pepper (cut into 1-inch pieces)
- 1 pint Cherry tomatoes
- 1/2 cup Kalamata olives (pitted)
- 1 tsp Salt
- 1/2 tsp Black pepper

Cut the chicken breasts into 1-inch cubes.

In a bowl, whisk together lemon juice, olive oil, oregano, rosemary, minced garlic, salt, and pepper.

Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

While the chicken marinates, prepare the vegetables. Cut the red onion and bell peppers into 1-inch pieces.

Thread the chicken, red onion, bell peppers, cherry tomatoes, and Kalamata olives onto skewers.
