- 2 cups certified GF oat flour
- 3/4 cup tapioca starch
- 1/4 cup potato starch
- 1 1/2 tablespoons psyllium husk powder
- 2 1/4 teaspoons instant yeast
- 1 teaspoon salt
- 3 tablespoons honey
- 1 1/4 cups warm water (110°F / 43°C)
- 2 tablespoons olive oil
- 1 large egg
- 2 tablespoons certified GF rolled oats (for topping)

Whisk together the oat flour, tapioca starch, potato starch, psyllium husk powder, yeast, and salt.

In a separate bowl, whisk the honey into the warm water until dissolved. Add the olive oil and egg.

Pour the wet ingredients into the dry and mix for 2-3 minutes until well combined.

Transfer the dough to a greased 9x5 inch loaf pan. Smooth the top with a wet spatula.

Brush the top lightly with water and sprinkle with rolled oats.

Cover and let rise in a warm place for 45-60 minutes until the dough reaches just above the pan rim.
