Ingredients
- 2 3/4 cups gluten-free 1-to-1 baking flour
- 1 tablespoon psyllium husk powder
- 2 1/4 teaspoons instant yeast
- 2 tablespoons sugar
- 1 teaspoon salt
- 3 tablespoons unsalted butter (melted)
- 1 cup warm milk (110°F / 43°C)
- 1 large egg (room temperature)
- 1 teaspoon apple cider vinegar
- 2 tablespoons melted butter (for brushing)

In a large bowl, whisk together the flour, psyllium husk powder, yeast, sugar, and salt.

In a separate bowl, combine the melted butter, warm milk, egg, and apple cider vinegar.

Pour the wet ingredients into the dry and mix until a soft, sticky dough forms. Let rest for 5 minutes.

Line a 9x13 inch baking pan with parchment paper or grease well.

With oiled hands, divide the dough into 12 equal portions. Roll each into a ball and place in the prepared pan, spacing them about 1/2 inch apart.

Cover with plastic wrap and let rise in a warm place for 40-50 minutes until the rolls have puffed and are touching each other.

Preheat your oven to 375°F (190°C) during the last 10 minutes of rising.
