- 1 1/2 teaspoons Baking Soda
- 1/4 teaspoon Salt
- 1/2 cup Unsalted Butter, softened
- 1/2 cup Brown Sugar, packed
- 1/4 cup Granulated Sugar
- 1/4 cup Molasses
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1/4 cup Granulated Sugar (for coating)
Instructions
- 1
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- 2
In a medium bowl, whisk together the gluten-free flour, ginger, cinnamon, cloves, baking soda, and salt.
- 3
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- 4
Beat in the molasses, egg, and vanilla extract until well combined.
- 5
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- 6
Roll the dough into 1-inch balls. Roll each ball in granulated sugar to coat.
- 7
Place the sugared dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
