- 2 lbs Russet Potatoes
- 1 head Garlic
- 2 tablespoons Olive Oil
- 4 tablespoons Unsalted Butter
- 1/2 cup Heavy Cream
- 1/4 cup Milk (whole milk or unsweetened almond milk)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Fresh Chives (chopped, for garnish)
- 1 tablespoon Fresh Parsley (chopped, for garnish)
- 1/4 teaspoon Garlic Powder
- 2 tablespoons Sour Cream or Greek Yogurt

Preheat oven to 400°F (200°C). Cut the top off the head of garlic, exposing the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-40 minutes, or until cloves are soft and golden.

While the garlic is roasting, peel and quarter the potatoes. Place them in a large pot and cover with cold water. Add a pinch of salt.

Bring the potatoes to a boil and cook for 15-20 minutes, or until fork-tender.

Drain the potatoes thoroughly and return them to the pot.

Squeeze the roasted garlic cloves out of their skins into the pot with the potatoes. Add the butter, heavy cream, and milk.
