- 3 large Ripe Plantains
- 3 tablespoons Coconut Oil
- 2 tablespoons Vegetable Oil
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cinnamon
- 1 tablespoon Brown Sugar
- 1/2 teaspoon Vanilla Extract
- 1/8 teaspoon Ground Nutmeg
- 1 teaspoon Lime Juice
- 2 tablespoons Water

Peel the plantains. For best results, the plantains should be mostly black with some yellow.

Slice the plantains diagonally into 1/2-inch thick slices.

In a large skillet, heat coconut oil and vegetable oil over medium heat.

Carefully place the plantain slices in a single layer in the hot oil. Avoid overcrowding the pan; fry in batches if necessary.

Fry for 3-4 minutes per side, until golden brown and caramelized.

In a small bowl, combine salt, cinnamon, brown sugar, nutmeg, vanilla and lime juice, then add water and mix.

Pour mixture into the pan, and cook for 2-3 minutes until the sauce has slightly thickened, coating the plantains.

Remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
