- 1 cup Dried Figs
- 1/2 cup Water
- 1 tablespoon Lemon Juice
- 2 cups Gluten-Free All-Purpose Flour Blend
- 1/2 cup Almond Flour
- 1/2 cup Rolled Oats (certified gluten-free)
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 1 cup Cold Unsalted Butter
- 1 Egg
- 1 teaspoon Vanilla Extract

Preheat oven to 350°F (175°C). Grease and lightly flour (using gluten-free flour) an 8x8 inch baking pan.

Prepare the fig filling: In a saucepan, combine dried figs, water, and lemon juice. Bring to a simmer over medium heat, then reduce heat and cook for 10-15 minutes, or until figs are softened and the liquid has mostly evaporated. Mash the figs with a fork or potato masher.

In a large bowl, whisk together gluten-free flour, almond flour, rolled oats, brown sugar, granulated sugar, baking powder, and salt.

Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg and vanilla extract. Add to the flour mixture and stir until just combined. The dough will be crumbly.

Press half of the dough into the prepared baking pan to form a bottom crust.

Spread the fig filling evenly over the crust.
