Ingredients
- 2 cups Gluten-Free All-Purpose Flour Blend
- 4 teaspoons Baking Powder
- 1 tablespoon Granulated Sugar
- 1/2 teaspoon Salt
- 8 tablespoons Cold Unsalted Butter (cut into small cubes)
- 1 cup Buttermilk (or milk with 1 tbsp lemon juice)
- 1/4 teaspoon Baking Soda
- 1 teaspoon Apple Cider Vinegar
- 1 teaspoon Xanthan Gum (omit if your flour blend already contains it)
- 1/2 teaspoon Optional: Garlic powder
- 1 teaspoon Optional: Dried herbs
- 2 tablespoons Melted Butter (for brushing tops)

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the gluten-free flour, baking powder, sugar, baking soda, salt, xanthan gum (if using), garlic powder and dried herbs (if using).

Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

In a separate small bowl, whisk together the buttermilk and apple cider vinegar. Let stand for a minute.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.

Using a large spoon or ice cream scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving some space between each biscuit.

Brush the tops of the biscuits with melted butter.
