Ingredients
- 4 cups Shredded Coconut (unsweetened)
- 14 oz Sweetened Condensed Milk
- 2 large Egg Whites
- 1/4 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Almond Extract
- 1/4 teaspoon Salt
- 4 oz Optional: Melted Chocolate (for dipping)
Instructions
- 1
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- 2
In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and salt. Mix well until everything is evenly incorporated.
- 3
In a separate clean, dry bowl, beat the egg whites with an electric mixer until soft peaks form.
- 4
Gradually add the granulated sugar to the egg whites while continuing to beat until stiff, glossy peaks form.
- 5
Gently fold the meringue (egg white mixture) into the coconut mixture until just combined. Be careful not to overmix.
- 6
Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
- 7
Bake for 25-30 minutes, or until the macaroons are golden brown around the edges.
- 8
Let the macaroons cool completely on the baking sheet before removing them. This will help them firm up.
- 9
Optional: Dip the bottoms of the cooled macaroons in melted chocolate and let the chocolate set before serving.
Tips & Notes
- •Use unsweetened shredded coconut for a less sweet macaroon. You can adjust the amount of sugar if needed.
- •For a richer flavor, toast the shredded coconut lightly in a dry skillet before adding it to the mixture.
- •Store the cooled macaroons in an airtight container at room temperature for up to 3 days.
