Ingredients
- 1 1/2 cups Gluten-Free All-Purpose Flour Blend
- 1/2 cup Unsalted Butter, cold and cubed
- 1/4 cup Powdered Sugar
- 1/4 teaspoon Salt
- 1 Egg Yolk
- 2 tablespoons Cold Water
- 1 can (14 oz) Sweetened Condensed Milk
- 1/2 cup Lime Juice, freshly squeezed
- 2 tablespoons Lime Zest
- 2 Eggs
- 1/4 cup Granulated Sugar
- 1 cup Shredded Coconut, sweetened
- 1/2 teaspoon Vanilla Extract
- 1/8 teaspoon Pinch of Salt

Preheat oven to 350°F (175°C). Grease and lightly flour (with gluten-free flour) an 8x8 inch baking pan.

In a large bowl, combine gluten-free flour, cold cubed butter, powdered sugar, and salt. Cut the butter into the flour using a pastry blender or your fingers until the mixture resembles coarse crumbs.

Add the egg yolk and cold water, mixing until the dough just comes together. Press the dough evenly into the bottom of the prepared pan.

Bake the crust for 15 minutes, or until lightly golden.

While the crust is baking, prepare the filling. In a separate bowl, whisk together sweetened condensed milk, lime juice, lime zest, eggs, granulated sugar, shredded coconut, vanilla extract, and a pinch of salt.
