- 1 cup Long-grain white rice
- 2 cups Water
- 1 tablespoon Olive oil
- 1/4 cup Onion (finely chopped)
- 2 cloves Garlic (minced)
- 1 tablespoon Lime zest
- 2 tablespoons Lime juice (freshly squeezed)
- 1/2 cup Fresh cilantro (chopped)
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground cumin
- 1/2 cup Chicken broth (optional) (replace some water for richer flavor)
- 1 leaf Bay leaf (optional)
- 1/4 teaspoon Black pepper

Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and helps prevent stickiness.

Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cumin and cook for another minute until fragrant.

Add the rinsed rice, water (and optional chicken broth), bay leaf, salt, and pepper to the saucepan. Bring to a boil.
