- 1 tablespoon Granulated Sugar
- 2 teaspoons Instant Yeast
- 0.75 teaspoon Sea Salt
- 284 g Warm Water (105-115°F)
- 1 tablespoon Extra Virgin Olive Oil
- 0.25 cup Tapioca Starch (for dusting)
- 0.25 cup Gluten-Free All-Purpose Flour (for dusting)

First, accurately measure your gluten-free pizza flour blend. Spoon the flour lightly into your measuring cup, then level it off with a knife.

In a large mixing bowl (or the bowl of your stand mixer), combine the gluten-free flour, sugar, instant yeast, and salt. Add the warm water and olive oil.

Mix all ingredients until a smooth, elastic dough forms. The dough will be quite wet and sticky – this is normal for authentic ciabatta!

Scrape down the sides of the bowl, cover it with plastic wrap or a damp towel, and let the dough rise in a warm place for about 45 minutes, or until nearly doubled in size.
