- 9 ounces Vegan Dark Chocolate (65-72% cacao)
- 2/3 cup Full-Fat Canned Coconut Milk
- 1/2 teaspoon Vanilla Extract
- 1/4 cup Unsweetened Cocoa Powder (for coating)
- 1/4 cup Finely Ground Hazelnuts (for coating)
- Pinch Sea Salt
- 1/4 cup Coconut Flakes (unsweetened, for coating)
- 1/4 cup Dairy-Free Chocolate Shavings (for coating)

Finely chop the dark chocolate and place it in a medium-sized, heat-safe bowl. The smaller the pieces, the easier and faster it will melt.

In a separate microwave-safe bowl, heat the coconut milk until it is warm but not boiling (about 25 seconds). Alternatively, heat in a small saucepan over medium heat until it begins to simmer.

Pour the warm coconut milk over the chopped chocolate, ensuring even coverage. Cover the bowl with a lid or plate to trap the heat and let it sit undisturbed for 5 minutes.

Remove the cover and gently stir the mixture with a spoon until the chocolate is completely melted, smooth, and creamy. If any chocolate remains unmelted, microwave in 5-10 second intervals, stirring in between, until smooth. Be careful not to overheat.

Stir in the vanilla extract (and a pinch of sea salt, if desired) until well combined.

Refrigerate the mixture, uncovered, for 1-3 hours, or until it is firm enough to scoop. To test, insert a knife into the center; it should come out mostly clean.

While the mixture chills, prepare your desired coatings (cocoa powder, hazelnuts, coconut flakes, or chocolate shavings) in separate shallow dishes.

Once chilled, use a tablespoon or small cookie scoop to form small balls. Gently roll each ball between your palms to create a smooth, round shape.

Roll each truffle in your chosen coating, ensuring it is evenly covered. Shake off any excess coating.
