Ingredients
- 8 oz High-quality dark chocolate (70% cacao or higher), chopped
- 4 tbsp Unsalted butter, cut into small pieces
- 4 Eggs, separated
- 1/4 cup Granulated sugar
- 1 cup Heavy cream
- 1/2 tsp Espresso powder
- 1 tsp Vanilla extract
- 1 pinch Pinch of salt

Melt the chocolate and butter together in a heatproof bowl set over a saucepan of simmering water (double boiler), stirring occasionally until smooth. Remove from heat and stir in the espresso powder and vanilla extract.

In a separate bowl, whisk the egg yolks and sugar together until pale and slightly thickened.

Gradually whisk the egg yolk mixture into the melted chocolate until combined.

In a clean, dry bowl, beat the egg whites with a pinch of salt until stiff peaks form.

In another clean bowl, whip the heavy cream until soft peaks form.

Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites until just combined. Be careful not to overmix.
