Ingredients
- 1/2 cup King Arthur Gluten-Free Chocolate Cake Mix
- 2 tablespoons King Arthur Gluten-Free Chocolate Cake Mix
- 1/2 cup Confectioners' Sugar
- 2 tablespoons Dutch-Process Cocoa Powder
- 1/4 teaspoon Espresso Powder (optional)
- 3 tablespoons Hot Water
- 6 tablespoons Melted Butter
- 1 Large Egg
- 12 Bittersweet Chocolate Wafers (or GF Semisweet)
- 1 teaspoon Gluten-Free Flour (for dusting)
Instructions
- 1
Get started by preheating your oven to 375°F (190°C). Prepare six standard muffin-sized silicone baking cups by lightly greasing them with butter or cooking spray, then dusting with gluten-free flour.
- 2
In a medium-sized bowl, carefully whisk together the gluten-free chocolate cake mix, confectioners' sugar, cocoa powder, and optional espresso powder until everything is well combined.
- 3
Gently add the hot water and melted butter to the dry ingredients, stirring until just combined. Don't overmix!
- 4
Add the egg to the batter and stir until just incorporated. Be careful not to overmix the batter at this stage.
- 5
Divide the batter evenly among the prepared baking cups (approximately 60g each).
- 6
Gently press two bittersweet chocolate wafers into the center of each baking cup, ensuring they are completely covered by the batter.
- 7
Bake for 12-14 minutes, or until the internal temperature reaches 165°F - 170°F. The center should still appear slightly jiggly and underbaked.
- 8
Once removed from the oven, immediately loosen the edges of the cakes with a small knife or offset spatula.
- 9
Allow the cakes to cool in the cups for about 5 minutes before carefully inverting them onto individual serving plates.
- 10
Serve immediately while the chocolate center is still molten and delicious. Consider serving with a scoop of gluten-free vanilla ice cream, a drizzle of chocolate sauce, or a sprinkle of powdered sugar.
