Ingredients
- 1.5 lbs Boneless, skinless chicken breasts
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Orange bell pepper
- 1 Onion
- 2 tbsp Olive oil
- 2 tbsp Lime juice
- 2 tsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 0.5 tsp Smoked paprika
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 8-12 Gluten-free tortillas

Slice the chicken breasts into thin strips.

In a bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.

Add the chicken strips to the marinade and toss to coat. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator.

While the chicken marinates, slice the bell peppers and onion into thin strips.

Heat a large skillet or cast iron pan over medium-high heat.

Add the marinated chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes.

Add the bell peppers and onion to the skillet and cook until softened and slightly charred, about 5-7 minutes.

Return the chicken to the skillet with the peppers and onions and toss to combine.
