- 0.25 teaspoon Onion Powder

In a large bowl, combine the cassava flour, sea salt, cumin, garlic powder, onion powder, and chia seeds (if using).

Add the warm water, olive oil, and apple cider vinegar to the dry ingredients.

Mix well with a wooden spoon or your hands until a dough forms. The dough should be slightly sticky but not overly wet. Adjust water if needed, adding 1 tablespoon at a time.

Cover the bowl with a clean kitchen towel and let the dough rest for at least 15 minutes to allow the cassava flour to fully hydrate.

Divide the dough into 6-8 equal portions. Roll each portion into a ball.

Place one dough ball between two sheets of parchment paper. Use a rolling pin to roll the dough into a thin circle, about 6-8 inches in diameter. If the dough sticks, add a little more cassava flour between the parchment.

Heat a dry cast iron skillet or griddle over medium heat.

Carefully peel off the top layer of parchment paper and flip the tortilla onto your hand. Gently peel off the second layer of parchment paper.
