Ingredients
- 1 pound Gluten-Free Penne Pasta
- 1.5 pounds Boneless, Skinless Chicken Breasts
- 2 tablespoons Cajun Seasoning
- 2 tablespoons Olive Oil
- 2 tablespoons Butter
- 1 medium, chopped Onion
- 1 medium, chopped Bell Pepper (any color)
- 3 cloves, minced Garlic
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- 1/2 cup, grated Parmesan Cheese
- 2 tablespoons, sliced Green Onions

- 2 tablespoons, chopped (optional) Fresh Parsley

Cook the gluten-free pasta according to package directions. Drain and set aside.

Cut chicken breasts into bite-sized pieces. Toss with Cajun seasoning, salt, and pepper.

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

In the same skillet, melt butter over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute more, until fragrant.

Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
