Ingredients
- 2 cups Gluten-Free All-Purpose Flour Blend (with xanthan gum)
- 1/4 cup Tapioca Starch
- 1/4 cup Potato Starch
- 2 1/4 teaspoons Active Dry Yeast
- 1 1/4 cups Warm Water
- 2 tablespoons Olive Oil
- 1 teaspoon Sugar
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon Italian Herb Blend
- 1 Egg (for egg wash)
- 1 tablespoon Everything Bagel Seasoning (optional)
- 2 tablespoons Melted Butter (for brushing after baking)

In a large bowl, dissolve yeast and sugar in warm water. Let stand for 5-10 minutes until foamy.

Add olive oil, salt, garlic powder, and Italian herb blend to the yeast mixture. Stir well.

Gradually add the gluten-free flour blend, tapioca starch, and potato starch to the wet ingredients, mixing until a shaggy dough forms.

Turn the dough out onto a lightly floured surface (using gluten-free flour). Knead gently for 2-3 minutes until the dough comes together.

Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 45-60 minutes, or until doubled in size.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Punch down the dough and divide it into 12-16 equal pieces. Roll each piece into a thin breadstick shape, about 6-8 inches long.

Place the breadsticks on the prepared baking sheet. Brush with egg wash and sprinkle with everything bagel seasoning (if using).
