Ingredients

  • 3 medium Beets
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Smoked Paprika
  • 1/8 teaspoon Black Pepper
  • 1/4 teaspoon Dried Thyme
  • pinch Cayenne Pepper (optional)
  • 1/2 teaspoon Balsamic Vinegar (optional)

Instructions

    Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.

    Wash and scrub the beets thoroughly. Trim off the ends.

    Using a mandoline or a sharp knife, slice the beets into very thin rounds (about 1/16 inch thick). Consistent thickness is key for even cooking.

    In a large bowl, toss the beet slices with olive oil, sea salt, garlic powder, onion powder, smoked paprika, black pepper, dried thyme, and cayenne pepper (if using). Add balsamic vinegar if desired.

    Spread the beet slices in a single layer on the prepared baking sheets, ensuring they don't overlap.

    Bake for 25-35 minutes, flipping halfway through, until the edges are crispy and the centers are slightly firm. Baking time will vary depending on the thickness of the slices and your oven.
