- 12 Gluten-Free Corn Tortillas
- 1 tbsp Olive Oil
- 1 medium, chopped Onion
- 2 cloves, minced Garlic
- 2 tsp Chili Powder
- 1 tsp Cumin
- 0.5 tsp Smoked Paprika
- 0.5 tsp Salt
- 0.25 tsp Black Pepper
- 1 can (14.5 oz), drained Diced Tomatoes
- 0.25 cup, chopped Fresh Cilantro
- 2 tbsp Lime Juice
- 1 small, seeded and minced Jalapeño
- 0.25 cup, finely diced Red Onion
