Ingredients
- 4 Ripe Bananas
- 4 tablespoons Gluten-Free Butter
- 1/2 cup Brown Sugar
- 1/4 cup Dark Rum (40% ABV)
- 2 tablespoons Banana Liqueur (optional)
- 1/2 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
- 1 teaspoon Vanilla Extract
- 1/8 teaspoon Pinch of Salt
- 4 scoops Gluten-Free Vanilla Ice Cream
- 2 tablespoons Chopped Pecans or Walnuts (optional)
- 1 tablespoon Maple Syrup

Peel the bananas and slice them in half lengthwise, then cut each half in half crosswise. Set aside.

In a large skillet over medium heat, melt the butter. Once melted, add the brown sugar, cinnamon, nutmeg, and salt. Stir constantly until the sugar is dissolved and the mixture begins to bubble.

Add the sliced bananas to the skillet in a single layer. Cook for about 2-3 minutes per side, until they are softened and lightly caramelized.

Carefully pour the rum and banana liqueur (if using) into the skillet. Be extremely cautious as the rum may ignite. If desired, use a long lighter to carefully ignite the rum to flambé the bananas. Let the flames subside (or cook off alcohol if not flambéing).

Stir in the vanilla extract and maple syrup.

Remove from heat and spoon the banana mixture over scoops of gluten-free vanilla ice cream.

Sprinkle with chopped pecans or walnuts, if desired. Serve immediately.

- •Use very ripe bananas for the best flavor and texture.
- •Be extremely careful when adding and especially when flambéing the rum. Keep a lid nearby to smother any unexpected flames.
- •For a non-alcoholic version, omit the rum and banana liqueur and add a splash of pineapple juice or apple juice to the sauce.
