Ingredients

  • 4 Unripe Bananas
  • 2 tablespoons Coconut Oil (melted)
  • 1 tablespoon Lime Juice
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Sea Salt
  • 1 tablespoon Maple Syrup (optional, for extra sweetness)
  • 1/4 teaspoon Ground Ginger (optional)
  • 1/8 teaspoon Turmeric Powder (optional, for color and subtle flavor)

Instructions

  1. 1

Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper.

  2. 2

Peel the unripe bananas and slice them thinly, about 1/8 inch thick. A mandoline slicer will help achieve uniform slices.

  3. 3

In a large bowl, whisk together the melted coconut oil, lime juice, cinnamon, nutmeg, vanilla extract, sea salt, maple syrup (if using), ground ginger (if using), and turmeric powder (if using).

  4. 4

Add the banana slices to the bowl and gently toss to coat them evenly with the oil and spice mixture.

  5. 5

Arrange the banana slices in a single layer on the prepared baking sheets, making sure they don't overlap.

  6. 6

Bake for 1.5-2 hours, flipping the slices halfway through, until they are crispy and slightly golden brown. The baking time may vary depending on the thickness of the slices and your oven.

  7. 7

Remove from the oven and let the banana chips cool completely on the baking sheets. They will crisp up further as they cool.

  8. 8

Store the cooled banana chips in an airtight container at room temperature for up to a week.

Tips & Notes

  • Use slightly green, firm bananas for the best results; overly ripe bananas will be too soft and sticky.
  • For a more intense flavor, experiment with different spices like cardamom or cloves.
  • Keep an eye on the chips while they're baking to prevent burning. If they start to brown too quickly, reduce the oven temperature slightly.

Recipe Variations

  • Try adding different herbs for variety.
  • Substitute ingredients based on dietary needs.
