Ingredients
- 1 1/2 cups Gluten-Free All-Purpose Flour
- 1/2 cup Oat Flour
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1/2 cup Cold Unsalted Butter, cubed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 4 Apples, peeled and diced (Granny Smith or Honeycrisp)
- 1 tablespoon Lemon Juice
- 1 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1 tablespoon Cornstarch
- 1/4 teaspoon Salt
Instructions
- 1
Preheat oven to 375°F (190°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- 2
In a large bowl, whisk together the gluten-free flour, oat flour, brown sugar, granulated sugar, and salt.
- 3
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- 4
Add the egg and vanilla extract and mix until just combined. The dough will be crumbly.
- 5
Press half of the crumb mixture into the prepared pan to form the bottom crust.
- 6
In a separate bowl, combine the diced apples, lemon juice, cinnamon, nutmeg, and cornstarch. Toss to coat.
- 7
Pour the apple mixture over the crust in the pan.
- 8
Sprinkle the remaining crumb mixture evenly over the apple filling.
- 9
Bake for 30-35 minutes, or until the crust is golden brown and the apple filling is bubbly.
- 10
Let cool completely in the pan before lifting out using the parchment paper overhang and cutting into bars.
